Italian Kale With Turkey Sausage and Penne

- 4 tablespoons olive oil
- 1 medium onion, chopped into 1/2 inch dice
- 1 lb Italian turkey sausage (lean)
- 1 (12 -16 ounce) can tomato sauce
- 2 bunches kale, chopped into 1/2 inch ribbons
- 1 lb whole wheat penne
directions
- Bring 6 quarts water to a boil and add 2 tablespoons salt.
- In a large saute pan, heat oil and onion over medium heat until just softened, about five to seven minutes.
- Remove the casing from the turkey sausage and crumble into pan. Cook for 5-8 minutes or until mostly cooked.
- Add tomato sauce and kale.
- Cover pan and simmer for 15 minutes.
- Meanwhile, cook pasta according to package instructions until just "al dente" and drain.
- Remove lid from pan and add hot pasta. Toss to mix well and serve immediately.

I just wanted to comment because I made so many changes to your recipe that I feel like I can't really give you stars, but I loved the dish all the same. I used turkey bacon in place of sausage, a combination of fire-roasted diced tomatoes and homemade tomato sauce, 4 garlic cloves and some hot cherry peppers in addition to the onion, and 1 bunch of kale, along with bow tie pasta. I added some of the cooking liquid from the pasta to loosen the sauce a bit. I thought it was a great, simple dish, and everybody just loved it. Next time I make it, I will make sure I have sausage on hand so I can try it the way the recipe truly states. Thanks!

I agree, the finished product is awesome. I was a bit unsure about the "2 bunches of kale." How big is a bunch? My saute pan was overflowing. But it cooked down to a manageable size and went perfectly with the huge amount of pasta. I used three 8 oz. cans of tomato sauce. I also used hot turkey sausage. Very nice recipe. Thanks!
