- 1 tablespoon ghee
- 1 onion, diced
- 2 cups basmati rice
- 3 1⁄2 cups chicken broth
- 1 pinch saffron
- 1 tomatoes
- 1⁄2 cup frozen peas
- 1⁄4 cup cilantro
directions
- Heat ghee in pan. (You can substitute clarified butter, olive, or canola oil for the ghee.).
- Saute onion.
- Add rice and saute until you release the rice aroma.
- Add broth and saffron.
- Bring to pressure in your pressure cooker for 10 minute if using white basmati, 20 min for brown.
- Release pressure, add chopped tomato, peas, and cilantro. Stir and let sit while you prepare the rest of the meal.
- Enjoy.
