- 1⁄4 cup butter
- 3⁄4 cup onion, chopped
- 1 cup bell pepper, chopped
- 3 cups celery, chopped
- 1 minced garlic clove
- 1 (28 ounce) can diced tomatoes
- 3 tablespoons brown sugar
- 1 1⁄2 teaspoons salt
- 1⁄8 teaspoon pepper
- 2 bay leaves
- 2 tablespoons lemon juice
- 2 lbs medium shrimp or 2 lbs large shrimp, peeled and cooked
- 3 cups hot cooked rice
directions
- Melt butter in large skillet over medium heat and saute onion, garlic, celery, and bell pepper until tender approximately 15 to 20 minutes.
- Add tomatoes, brown sugar, salt, pepper, and bay leaves and simmer for an additional 15 to 20 minutes.
- Add lemon juice and shrimp.
- Cover and simmer for 6 to 8 minutes.
- Serve over a bed of rice.
