Penne With Italian Sausage, Tomato and Herbs

  • In skillet, cook sausage over medium heat until no longer pink in centre, about 15 to 20 minutes. (I boil first to get rid of some of the fat).
  • Drain well; cut into thin round slices.
  • In large pot of boiling water, cook pasta until tender but firm; drain and return to pot.
  • In nonstick pan, heat oil over medium heat; cook onions until tender, about 5 minutes.
  • Add garlic, tomatoes, basil and oregano;.
  • Simmer uncovered for 10 minutes.
  • Add cooked sausage.
  • pour over pasta; toss to mix.
  • Sprinkle with parsley, pepper to taste and parmesan if using.
  • toss again and serve.
  • enjoy.

  1. Delicious! I added a half julienned bell pepper, used rotini pasta and Cajun sausage since that's what was on hand. Will make again as it was quick and everyone really enjoyed.
     
  2. Quick and easy! I used Sweet Italian Turkey sausages and stirred the parsley in with the other herbs so it would cook a little. This recipe lends itself to additions, such as mushrooms and maybe shredded mozzarella. Thanks for a keeper. Made for Fall 2012 PAC game.
     
  3. Very, very good! To save a few calories & fat, we used turkey sausage. I actually removed the casings & cut into coins before frying. I liked that the sausage got crispy on all sides that way. This is a very simple recipe to prepare but has so much flavour. Makes your kitchen smell amazing, too!
     
  4. very good! i think next time i might add some mushrooms next time, and more garlic. i left out the parsley

Married on Jan 21st, 2005... love to cook and bake though fairly new at cooking for other people. My mother passed away with all her "famous" recipes in her head, so I love this site to ensure great recipes are passed down. I actually use this site daily now!!! My hobbies are cooking, reading, whale watching(my husband's business) and I'm trying to get back into exercising AGAIN...
