White Chile Con Queso

"In the 80's, JULIO'S in Juarez served a delicious chili con queso much like this. The original recipe was adapted from an Old El Paso newsletter."

  • Saute onion in oil until tender.
  • Add chilies, jalapenos,pepper and garlic powder and cook for 5 minutes, stirring often.
  • Add water and pimentos, mix, and add evaporated milk and cheese.
  • Reduce heat and stir as needed until cheese melts.
  • Serve with tortilla chips.

  3. This was wonderful! I much prefer white chile con queso - its more authentic, and much yummier, I think! I actually searched for this recipe becuase I wanted to make queso dilla burritos - a dish that I have gotten at Leo's (or Aveila's) in El Paso for 35 years (I have not lived there for 30 years, but I still love to go to Leo's,when I go to EP to visit my father). I love their queso dilla burritos so much that it is the only dish that I ever ordered there, and I wanted to make one that was very similar. This was very close, and quite delicious! I simply made the queso, as directed, then spooned it into flour tortillas, and heated them in the oven for about 15 mins. I loved them! It will also, of course, make a great dip! Thanks so much for bringing a bit of my childhood home to me!
     
  4. This is the first time we made "white" Chile Con Queso and everyone loved it. We didn't add any pimentos because we didn't have any. Think the pimentos would add a nice color. Can't wait to make this again. Thanks, M0M.
