ingredients
- 1 large onion, chopped
- 2 tablespoons oil
- 5 (4 ounce) cans chopped green chilies
- 5 jalapenos, diced
- 1⁄4 teaspoon black pepper
- 1 teaspoon garlic powder
- 1⁄2 cup water
- 1 (4 ounce) jar diced pimentos (optional)
- 4 cups shredded monterey jack cheese (about 1 lb)
- 1⁄2 cup evaporated milk
- tortilla chips
directions
- Saute onion in oil until tender.
- Add chilies, jalapenos,pepper and garlic powder and cook for 5 minutes, stirring often.
- Add water and pimentos, mix, and add evaporated milk and cheese.
- Reduce heat and stir as needed until cheese melts.
- Serve with tortilla chips.

This was wonderful! I much prefer white chile con queso - its more authentic, and much yummier, I think! I actually searched for this recipe becuase I wanted to make queso dilla burritos - a dish that I have gotten at Leo's (or Aveila's) in El Paso for 35 years (I have not lived there for 30 years, but I still love to go to Leo's,when I go to EP to visit my father). I love their queso dilla burritos so much that it is the only dish that I ever ordered there, and I wanted to make one that was very similar. This was very close, and quite delicious! I simply made the queso, as directed, then spooned it into flour tortillas, and heated them in the oven for about 15 mins. I loved them! It will also, of course, make a great dip! Thanks so much for bringing a bit of my childhood home to me!
