  • Preheat oven to 350.
  • Sift together all dry ingredients.
  • Beat eggs, add sugar, oil, zucchini and vanilla.
  • Combine both mixtures.
  • Add nuts.
  • Grease and flour 2 loaf pans.
  • Bake 1 hour.

  1. I made this for a pot luck dinner party and everyone loved it (although I remember it being sweeter when I was a kid). Instead of making two loaves, I made 16 (HUGE) muffins toped with nuts (instead of adding to mix), so folks who don't like nuts can just scrape them off. It took 15 min. of prep time and 30 minutes to bake. Thanks for the recipe to an old favorite!
     
  2. I've used this recipe several times in the last month, since the zucchini has been plentiful. It's wonderful! I don't change a thing. My family loves it. If they would stay out I might get some frozen for later! Thank you for a great recipe.
     
  3. I made this with my sister n law when i was a teenager. I had never made it before, it was pretty easy. Has an awesome taste. I love it.
