Zucchini Bread

So Easy to Make. This Zucchini Bread is fantastic. My Grandmother made it all the time for us when we were little. This is an easy recipe but has a great taste!

ingredients
- 1 cup oil
- 2 cups sugar (instead you can try 1 Cup Sugar & 1 Cup Brown Sugar)
- 3 eggs
- 3 teaspoons vanilla
- 1 teaspoon baking soda
- 2 teaspoons cinnamon
- 1⁄4 teaspoon clove
- 1 teaspoon nutmeg
- 1 teaspoon salt
- 1⁄2 teaspoon baking powder
- 3 cups flour
- 2 cups zucchini
- 1 cup nuts
directions
- Mix all ingredients together well.
- Bake at 350 degrees for 55 - 60 minutes.

This turned out just fine, although for some reason I feel like it's missing something. It's very good for basic zucchini bread, but even with the cinnamon, cloves and nutmeg (flavors I LOVE!), it just doesn't seem to be enough. Could be just me though. I made the recipe exactly as written although I mixed the dry ingredients 1st, beat the eggs, oil, sugar and vanilla separate and added in the dry slowly. Then stirred in the zucchini last. The loaves are gorgeous and baked up perfectly in 55 mins. All in all very good. I may try this again and add in some carrot and maybe a little bit more spice. Thanks for sharing InAHurry.
