  • Heat salted water to boiling; add potaotes.
  • Cover and heat to boiling; reduce heat.
  • Cook until tender; drain.
  • Cool slightly and then cut into cubes.
  • Mix mayonnaise, vinegar, mustard, salt and pepper together in a large bowl.
  • Add veggies, potatoes and eggs; toss.
  • Cover and refridgerate at least 4 hours to blend flavors.
  • **Isometimes vary my mustard- creole flavor, ceasar flavor, dijon, etc for a different taste!

  1. Very similar to the potato salad recipe I make. I cut the mayo to 1 C and added 1/2 C Italian salad dressing to thin. Of course, I also dropped the vinegar, but kept the mustard for color. Great!
     
  2. Yum! This is the way I've always made potato salad except I also add chopped dill pickle. I don't use as much mayonnaise and add more mustard, but that's just a personal preference. Thanks for sharing :)
