Vanilla Peach Syrup

"I can peaches every year, and did a little experiment with the leftover peaches. My husband loves this on waffles. Tastes great over ice cream, too."

ingredients

  • 5 cups peaches, puree (peel, remove pits and toss the rest in the blender)
  • 2 cups sugar
  • 2 tablespoons lemon juice
  • 2 teaspoons vanilla

directions

  • Combine peach puree, sugar and lemon juice in kettle.
  • Bring to a boil.
  • Simmer 5 minutes.
  • Add vanilla.
  • Pour into hot jars and seal.
  • Process in boiling water bath for 20 minutes.

  1. I absolutely love this recipe. My family won't eat any other syrup now! I made a couple quick changes but still is outstanding! I first half the recipe then I used canned peaches instead of fresh but overall I kept everything else the same Im sure your family will love you for it!!!!

  3. Yumm, Heading off this morning to pick more peaches. Love this recipe, thought I did alter it a little. As well as adding the vanilla I added 2 tablespoons of chocolate port. It was a big hit in my house hold last night, in fact theres no ice cream left. Thanks for sharing it.
     
  4. Just made a big pot of this, and it is fabulous! I made 18 cups of peach puree but only put in sugar and vanilla for a triple batch. Filled 3 qts and 4 + pt jars. Next time I am interested in substituting the vanilla for almond oil.
     
  5. I used my immersion blender on 16 cups of peaches, then added the sugar and lemon in the stockpot. Very easy. I came out with 7 pints and 6 - 1/2 pints. Great recipe!! I plan on trying this with other fruits as well.

Tweaks

  1. This was so easy I almost wondered if I had missed something. I forgot to add the vanilla with the first batch and I actually liked it better without. I also tried a batch substituting honey (3/4 cup honey for 1 cup sugar) for sugar - and it was really good too.
