Upside-Down Apple Cakes

- 2 tablespoons butter, melted
- 3 small sliced peeled apples
- 3⁄4 cup brown sugar, packed
- 1⁄2 teaspoon ground nutmeg or 1/2 teaspoon cinnamon

BATTER
- 1⁄2 cup granulated sugar
- 1⁄4 cup vegetable oil
- 1 egg
- 1⁄2 cup unsweetened applesauce
- 1 tablespoon lemon rind, grated
- 1 teaspoon vanilla
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1⁄2 teaspoon baking soda
- 1⁄2 teaspoon ground nutmeg
directions
- Brush bottoms and sides of 12-cup muffin pan with butter, Divide apples among cups, cutting to fit. Combine brown sugar and nutmeg; sprinkle over apples in each cup.
- BATTER: In a small bowl, stir together sugar, oil, egg, applesauce, lemon rind, and vanilla until blended.
- In a medium bowl, combine flour, baking powder, baking soda, nutmeg and salt; stir in liquid mixture and combine. Spoon batter evenly over apples in each cup.
- Bake in 350F oven for 15-20 minutes or until golden and toothpick inserted in center comes out clean.
- Let cool in pan on wire rack for 5 minutes. Run thin metal spatula around edge of cups and turn out. Serve warm.

Made a double batch of these for my other half to take to a weekly meeting he attends, but kept 4 of the 'muffin' cakes here for us ~ Well, there're only 2 left & he's still at the meeting, so I might just manage yet another one! Much enjoyed putting these little tasties together, & will deinitely do them again another time! I usually have homemade applesauce around so used some of that in this recipe! <br>I guess the dish that I am famous for is my Christmas ham - my family all comes home for Christmas, and if i don't have my ham they are dissapointed, and my grandson wants the pistachio squares!!! so I guess that is the dishes that I'm famous for.
