For bean mixture
- 1 (14 ounce) can cannellini beans, rinsed and drained, then mashed
- 2 garlic cloves, finely chopped
- 1 tablespoon fresh lemon juice
- 2 tablespoons olive oil
- 2 tablespoons chopped fresh parsley or 2 tablespoons basil
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon black pepper

For tuna salad mixture
- 2 (6 ounce) cans italian tuna in vegetable oil, drained
- 1⁄4 cup pitted black olives, finely chopped
- 1 celery rib, finely chopped
- 2 tablespoons finely chopped red onions
- 2 tablespoons olive oil
- 1 tablespoon fresh lemon juice
- 1⁄4 teaspoon salt
- 1⁄8 teaspoon black pepper

For sandwiches
- 8 slices rustic bread
- 1 cup loosely packed trimmed watercress leaf
directions
- Mix together all ingredients listed under 'bean mixture' and set aside.
- Mix together all ingredients listed under 'tuna salad mixture' and set aside.
- Spoon 1/4 of the bean mixture on 1 slice of bread, then top with 1/4 of the tuna salad, some watercress, and another slice of bread.
- Make the rest of the sandwiches in the same manner.

I wanted a quick easy dinner and this was it. I only had regualr tuna and I didn't have anything fresh (herbs+lemon) or the celery but it came out wonderful. I toasted some sourdough bread and used red leaf lettuce and it was very good. I bet it would be better with the fresh ingredients and I will be trying again. Thanks!
