Updating my review to add that this salad is perfect for a potluck since you can make it the night before an event and that's just enough time for the acidity to wane and the flavors to meld. Delicious and refreshing salad. I served it on a bed of torn iceberg lettuce, although DH says he prefers it without the addition of lettuce. This took me quite a bit longer than 10 minutes to make the dressing and chop the fruit and veggies. I did make the dressing first and placed it in the same non-reactive bowl that I placed the chopped fruit/veggies into since I theorized the lemon juice would keep the apples from turning brown as I chopped them. Thanks, ElaineAnn! Made for All you Can Cook Buffet special event.
