Tuna and Broccoli Bake

  • Place broccoli on bottom of 2 quart baking dish. Top with bread cubes and tuna. In medium bowl, combine cottage cheese, Cheddar cheese, eggs and pepper. Spread evenly over tuna mixture. Bake in a 400 degree oven for 30 minutes or until golden brown and puffed.

  1. This recipe is highly undervalued! This recipe came from a great cookbook I bought in a fundraiser years ago (thanks, 4-H mom, for posting as I am away from my cookbook).I like it because it is packed with calcium, protein, and fiber, and it is also economical. You can use the less expensive tuna or Albacore if you have it. Both work. If your kids (or significant other) are fussy about cottage cheese, just don't let them see it when you cook. You would never guess it's in there. I improve this recipe by doubling the bread cubes--it's okay to use stale-- and I top the bread cube layer with jalapenos (the pickled kind which are not too spicy) . Since I live in California where fresh broccoli is easy to come by, I typically cut up a bunch, including the peeled stalk which is the best part, and then pre-cook it a bit in the microwave or steamer.
