Tropical Chia Pudding

- 1⁄3 cup chia seeds
- 1⁄2 cup rolled oats
- 2 cups milk, of choice (almond or coconut work well!)
- 1 pinch salt
- 1⁄4 teaspoon vanilla extract
- 1 fresh orange, supremed
- 1 fresh mango, cut into small chunks
- 1⁄4 cup unsweetened flaked coconut
- 1⁄4 cup pepitas
directions
- Combine chia, oats, milk, vanilla, salt in a container and leave to set overnight or for at least 20 min.
- When ready to serve, toast coconut flakes in a dry pan on the stove over low heat for 3 minutes. Watch them closely!
- Divide pudding into two containers. Top with orange, mango, pepitas, and coconut flakes before serving.
