Tofu Cinnamon Muffins

ingredients
- 1 cup whole wheat flour
- 1 cup oatmeal
- 8 ounces soft tofu
- 2 eggs
- 1⁄4 cup oil
- 1⁄2 cup honey
- 1 1⁄2 teaspoons cinnamon
- 1⁄2 teaspoon salt
- 2 teaspoons baking powder
- 1⁄4 teaspoon baking soda
directions
- Mix first two ingredients in a large bowl and set aside.
- Mix the remaining in a blender.
- Pour the blended ingredients into the flour mixture.
- Stir well.
- Fill oiled muffin tins 2/3 full.
- Bake at 425 degrees for 12-15 minutes.

This was a good recipe. I made these twice, once as identified here and once with a half cup of blueberries and half a cup of walnuts, and minus the cinnamon. I actually liked the first version better and I am going to try these again becuase I like the fact that there is tofu in there and whole wheat!

These were great! Not to mention a great way for me to sneak some whole grain into my picky four year old. The only change I would make is to suggest adding more cinnamon. I more than doubled the recipe amount and they came out perfect, not overpowering. I say this mainly because the nutty tofu smell was a bit strong even for me, a tofu fan. Thanks for the recipe, this was very quick and easy, my family liked them and I'll definitely be making them again. I think I might add raisins next time as well.
