ingredients
- 2 garlic cloves, crushed
- 1⁄2 cup olive oil
- 3 tablespoons fresh lemon juice
- 1⁄4 cup chopped of fresh mint
- salt & freshly ground black pepper
- 3 (6 inch) pita bread, torn into 1-inch pieces
- 2 tomatoes, cut into 1/2-inch dice
- 1 cucumber, peeled and cut into 1/2-inch dice
- 1⁄4 cup chopped flat leaf parsley
- 1⁄4 cup chopped green onion
directions
- Preheat the oven to 400º.
- In a small bowl, combine the garlic, olive oil, lemon juice, and mint. Season with salt and pepper to taste and set aside.
- Place the pita pieces on a baking sheet and bake for 5 to 10 minutes, or until the pita is slightly browned.
- In a large bowl, combine the pita, tomatoes, cucumber, parsley, and green onions. Add the dressing and gently toss to coat. Allow the salad to sit for 15 minutes so the pita can absorb the flavors of the vegetables and vinaigrette.
