- 2 medium sweet potatoes, diced into 1/2 to 1 inch cubes
- 1 small onion
- 4 eggs
- 1⁄8 cup oil (olive, safflower, other)
- 1⁄4 teaspoon black pepper
- 1⁄4 teaspoon turmeric
- 1⁄4 teaspoon sea salt
- 2 medium sweet potatoes, diced into 1/2 to 1 inch cubes

- 1⁄4 teaspoon black pepper
- 1⁄4 teaspoon turmeric
- 1⁄4 teaspoon sea salt

- Put oil in 10 inch skillet over medium heat; when heated, add chopped sweet potatoes, onion, black pepper and turmeric. Saute and stir occasionally for 5 or 6 minutes. With ingredients spread evenly across pan, break the eggs one at a time over each quadrant of the pan so there is an egg over each serving. Reduce heat to low medium and cover pan. Cook for about 10 minutes or until eggs are set to your taste. Uncover, remove from heat and sprinkle with a little sea salt.
