DIRECTIONS

  • Preheat Oven to 400F.
  • Mix the sweet potato and oil, add salt and pepper to taste.
  • Press the mixture into a greased muffin tin.

  • Bake an additional 10 minutes, or until the eggs are cooked to your taste.
