Sultana Caramel Self Saucing Pudding

ingredients
- 2 ounces butter
- 1⁄4 cup brown sugar
- 1 egg
- 1⁄2 cup sultana
- 1 teaspoon vanilla essence
- 1 1⁄4 cups flour
- 1 teaspoon baking powder

Sauce
- 3⁄4 cup brown sugar
- 2 ounces butter
- 1 1⁄2 cups water
directions
- To make the sauce put sugar, butter and water in pan and bring to boil.
- Put aside.
- Cream butter and sugar.
- Add egg and vanilla essence and beat well.
- Sift in dry ingrediants and add sultanas.
- If dry may need a little milk.
- Put the hot sauce into pudding dish, spoon cake mixture on top.
- Bake at 350 deg F for approx 45 mins.
- Serve with cream or ice cream.

Wonderful recipe! It is exactly like the one passed down to me from my great-grandmother (from her mother) with one exception: the ingredients list read "butter the size of an egg, 3 teacups of flour, etc." Our family always called it Raisin Pudding, I read somewhere that this recipe originated in the early 1800s. I can well see why it has survived so long. When I was pregnant with my first child, I craved this yummy dish...guess that's why I ended up gaining 50 lbs! The only variation I sometimes make to this dessert is to add some chopped walnuts to the batter.
