    cups fresh cleaned spinach leaves

    cup sliced mushrooms

    chopped red onion

    cup unsweetened apple juice concentrate, thawed

    cup red wine vinegar (or white)

DIRECTIONS

  • Add spinach, onions and mushrooms to large bowl, mix.
  • Fry bacon till crisp. Remove all bacon dripping but 2 tablespoons Add apple juice CONCENTRATE and vinegar, bring to a boil. Pour over salad, mix well, and serve.
