ingredients
- 3 3⁄4 cups all-purpose flour
- 1 teaspoon baking powder
- 1⁄2 teaspoon salt
- 1 cup unsalted butter, room temp
- 2 cups sugar
- 2 large eggs
- 1 tablespoon vanilla (or half vanilla and half almond extract)
directions
- Mix dry ingredients in separate bowl.
- Using stand mixer or hand mixer, beat butter and sugar until fluffy.
- Beat in eggs one at a time, scraping down bowl each time, then vanilla and/or almond extract.
- Add flour mixture gradually and mix at low speed until comes together.
- Turn out onto flat surface.
- Knead a couple of times just until smooth.
- Pat into a flat disk, wrap in plastic and chill until firm enough to roll, about one hour.
- Roll and cut as desired.
- Bake at 350 about 8-10 minutes on parchment-lined sheets.

Excellent sugar cookie recipe, especially for rolling and cutting. I baked them on parchment on a stainless sheet so the bottoms were the same color as the tops. Also, unlike some other recipes, these are done before golden color appears so are completely uniform in color, making them perfect for decorating. Completely delicious too!
