- 2 cups Baby Spinach
- 1⁄4 cup crushed walnut pieces
- 1⁄2 cup fresh mushrooms, sliced
- 1⁄2 red onion, sliced thin
- 1 -2 whole strawberry, sliced thin
- bottled raspberry walnut vinaigrette dressing (Ken's Steakhouse has a wonderful "lite" Vinaigrette)
directions
- In large bowl combine spinach, walnuts, mushrooms, red onion, and strawberry slices.
- Toss to Mix.
- Just before serving add dressing to taste.
- Divide among 4 salad plates and serve.

This was easy to make, and perfect for a summer night with french bread and herbed cheese. We topped the salad with the feta cheese, as suggested, and it was very goood. Although we thought the recommended dressing was OK, I think we'll try another type next time. The raspberry dressing conflicted a little with the fresh strawberries for us. But, aside from that minor adjustment, it was an excellent salad!
