Spinach-Artichoke Casserole

ingredients
- 2 (10 ounce) packages frozen chopped spinach
- 2 (6 -8 ounce) jars marinated artichokes
- 1⁄2 cup parsley, chopped
- 5 eggs, lightly beaten
- 1⁄2 teaspoon savory
- 1⁄2 teaspoon thyme
- 1 1⁄2 cups cheddar cheese (I use a combo of swiss, cheddar and monterey Jack just for variation) or 1 1/2 cups swiss cheese, grated (I use a combo of swiss, cheddar and monterey Jack just for variation)
- 1 small onion, chopped
- salt and pepper
directions
- Oil 9 X 13 pan with artichoke oil.
- Cut up the artichokes.
- Arrange the artichokes on the bottom of the pan.
- In a Large bowl, mix spinach, parsley, eggs, herbs, salt & pepper and 1°C grated cheese.
- Pour over the top of artichokes; sprinkle the top with the remaining 1/2 C cheese. (I always tend to use more so add more if your a cheese lover).
- Bake at 350 for 30 minutes.
- This recipe is good hot or cold.

I made 4/5ths the quantity due to a slight shortage in the spinach department! Baked this in an 8x8 pyrex dish and got 4 good sized portions. We had this hot on day 1 and cold the next. Slight dissent in the ranks over the rating; Mr B preferred it hot and awarded 4 stars: I preferred it cold and give this 5 :-) Loved the flavours, texture and ease of making. I did have to make a couple of changes; I used canned artichokes ('cos that's what I had to hand) and as I don't have any savory I was generous with the thyme and added a touch of concentrated mint sauce (the Kitchen Dictionary says of savory "A herb in the mint family which has the flavor of both mint and thyme")! Next time I might add a little smoked cheese to the mix.

I cut this recipe in half and we enjoyed it. I think I would probably like it better with canned artichokes rather than the marinated as the vinegar taste was pretty dominate at times. I will make this again as we are always looking for good ways to have spinach and this is a goon one. I loved the edges.

I was bound to love this: it includes so many of my favourite ingredients. It is a quiche-like recipe without the pastry, so much healthier. The instructions were easy to follow, and it was quick to make. I didn't have any savoury so I added some oregano. I used a combination of cheeses, including a tablespoon of parmesan. The only other change I made was to add 4 cloves of minced garlic (just l-o-v-e the stuff). I also minced the onion. So delicious! We enjoyed this warm, then I enjoyed it again next day at room temperature as a take-to-work lunch. Thank you for sharing this wonderful recipe, kzbhansen. I'll be making it again - SOON. And next time, I'll be doubling the recipe.

People love my pizza Swirls. I love all foods. I love to try complicated recipes for fun and I make alot of my own breads. My kids love to help me cook I think its a great time to get to communicate with our kids especially when life can get so crazy with school and such, this is a great habit we have gotten into, cooking and chatting LOL.
We now have a smoothie night where we make an assortment of smoothies as a dessert, and on occasion we have had smoothies for dinner but that is a rare occasion. Its kids choice and they have fun on recipezaar because I have dedicated a cookbook just to smoothies. My daughter is getting creative in her smoothie endeavors and coming up with some incredible ideas!
In Jan 09 I was diagnosed with Breast Cancer and have just began the treatments
to get myself back up to speed.
*UPDATE* November 2009
I have finished my radiation and chemotherapy and am on the mend. Chemo
caused nerve damage in my leg so I am unable to walk without a cane and a brace but otherwise doing great!!!!!!!!

In september of 2009, The Pink ribbon tour came through Wickenburg. The pink ribbon tour are 2 Pink Fire Trucks with the firefighters wearing pink. I had the honor
of being one of the people that got to sign my name on the firetrucks as it was beginning a long tour of the United States.
