Hmmm. I had printed this recipe to try a little while ago, and I made it for dinner last night. I expected us to like it better than we did. We thought it was just okay; we found it to be very dry, and in spite of the fact that we like all the ingredients, we just didn't love the flavor. I also had to wing it with the second layer of spinach mixture, because the recipe didn't specify where to put it. Nice to try something different, but I don't think anyone here is in a hurry for me to make this again.

This is a hearty meatless meal with a lot of flavor. I did have a heck of a time figuring out when to add the second layer of spinach mixture. I eventually repeated the 2nd layer the same as the first, then topped with noodles and sauce. The result was a nice flavor that didn't just taste like "jarred" sauce. I especially liked the spinach layer. I used a blend of cheddar/mont. jack cheese. Note: this reheats really well in micro. Thanks Mommy Chef, for posting. Roxygirl
