- 1 onion, chopped
- 1 red pepper, chopped
- 1 lb ground beef
- 2 tablespoons chili powder
- 1 teaspoon unsweetened cocoa
- 1 teaspoon ground cumin
- 1⁄2 teaspoon ground cinnamon
- salt
- 1 (14 1/2 ounce) can stewed tomatoes
- 1 (15 ounce) can black beans, rinsed and drained
- 2 cups water
- 8 ounces ziti pasta
- shredded cheddar cheese (optional)
- sour cream (optional)
directions
- In a large skillet, brown ground beef, onion, and red pepper until vegetables are tender and beef is cooked through. Drain.
- Add spices, tomatoes, black beans and water. Stir together.
- Add pasta. Simmer, covered, until pasta is tender. May need to add more water. I simmer it for about 20 minutes.
- Serve garnished with shredded cheese and sour cream, if desired.
