- 1⁄4 cup heavy cream or 1/4 cup whipping cream
- 1⁄2 teaspoon ground coriander
- 1⁄4 teaspoon ground cayenne pepper
- 1⁄4 teaspoon ground cumin
- 1⁄2 teaspoon salt
- 4 cups fresh corn kernels (7-8 ears)
- 1⁄2 cup fresh cilantro (loosely packed)
directions
- In a 12" skillet, heat the cream and spices to boiling on medium-high; Cook for 3 minutes, stirring often.
- Add corn and cook 5 min until corn is tender and heated through, stirring occasionally. Sprinkle with cilantro to serve.
- Per serving, 325 calories, 6g protein, 40g carb, 19g total fat, 11g saturated, 6g fiber, 61mg cholesterol, 310 mg sodium.
