  • 1 (14 3/4 ounce) can salmon
  • 10 saltine crackers, crushed
  • 2 eggs
  • 12 teaspoon Old Bay Seasoning
  • 1 dash fresh pepper
  • 3 green onions, sliced very thin
  • 14 cup vegetable oil

  • Drain salmon, remove big bones. In separate bowl add the eggs (beat lightly,) the crushed saltines, and the green onions, mix lightly.
  • Add the drained salmon, mix well, breaking up big chunks. Form into 6 patties (may add some more crushed saltines to the outside of each patty, pressing in.).
  • Fry in hot oil on medium heat for 6 or 7 minutes on first side (until lightly browned) and gently flip to other side. Cook for 5 to 6 more minutes, remove from pan and serve.
