Southern Broccoli Cornbread

- 1 (8 1/2 ounce) package Jiffy corn muffin mix
- 1 egg
- 1⁄3 cup milk
- 1⁄4 cup diced onion
- 1 cup frozen chopped broccoli floret
- 1⁄2 cup shredded cheddar cheese (reduced fat works too)
directions
- Thaw and drain broccoli
- Preheat oven to 400 degrees.
- Combine first three ingredients, mix thoroughly.
- Stir in onion and broccoli
- Sprinkle in cheese and continue mixing, batter will be lumpy.
- Pour mix into muffin tin or square baking pan (I use an 8x8).
- Bake at 400 degrees until golden brown and solid in the middle.
- NOTE: Bake time may not be exact, my old oven is a little "off".

This was met by rave reviews from my 4 yr old DD. Between the two of us we finished the whole pan in one day! The only thing I wasn't crazy about was the crispness of the onions. They seemed underdone to me, even though they were chopped very fine. I think next time I will saute the onions first to soften them up a little, and also maybe add a little salt to balance out the sweetness of the cornbread. Great fun recipe.

I just started REALLY cooking in late 2007. Before that it was a struggle to get me to make a grilled cheese and I always convinced people to cook for me. I think I felt a calling to learn how to cook because of the "Ta Da" factor!! Being an artist, I love to step back and say "Ta Da!! Look what I made!"... it's a good feeling. And with cooking when you're done, you get to eat it!!
UPDATE: Since the new year, I have started cooking healthier and living a more active lifestyle. I feel better and the new recipes I post will probably reflect this change. :)
