- 2 tablespoons vegetable oil
- 4 boneless pork chops
- 1 cup beef broth
- 1 tablespoon chopped parsley
- 1 teaspoon prepared mustard
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon pepper
- 1 cup sour cream
directions
- In a large skillet, heat oil over medium-high heat.
- Add pork chops and cook for 2 minutes per side until browned.
- In a small bowl combine broth, parsley, mustard, salt, and pepper.
- Pour broth mixture over pork chops.
- Cover, reduce heat to medium-low, and simmer for 1 1/2 hours.
- Stir in sour cream and cook for 3 to 4 minutes or until heated through.
- Do not let boil.
- Serve over hot rice if desired.

Outstanding recipe! I had some chicken stock left over in the fridge so I used that instead of beef. Also I took a hint from Lauralie and simmered it for just over an hour. The chops were not over cooked at all and the sauce is to die for! I served this with a brown rice pilaf and broccoli slaw. It was delicious and everyone loved it. Thanks for sharing this delicious new favorite!

Wonderful pork chop recipe! The sour cream sauce puts these chops over the top. I simmered the pork chops for 1 1/2 hours but next time would stop after 1 hour. Instead of prepared mustard I used a grainy mustard and omitted the salt. When ready to add the sour cream I moved the chops on the side and stirred in the broth mixture that was left in the pan.
