Smokin Black Bean Soup

- 1 lb black beans, soaked and rinsed
- 12 ounces hickory smoked ham
- 2 carrots
- 1 medium onion
- 3 pieces celery
- 2 tablespoons minced garlic
- 6 chicken bouillon cubes
- 6 -8 cups water
- 2 tablespoons chili seasoning mix
- 1⁄4 cup butter
directions
- In a stock pot, melt butter and add chopped carrots, onion, celery and garlic. Saute' till onions are caramelized. Add boullion cubes, chilli seasoning and 6 C water. Bring to a boil, add beans and reduce to a simmer. Cover with the lid tilted and simmer for 2-2.5 hrs adding enough water occasionally to keep soupy. Serve with a dallop of sour cream and shredded cheddar, garnish with fresh chives.

I am a truck driver from Illinois and i hate crappy food(like the stuff in most truckstops) I cook alot on my off time and take it with me in the truck. This saves me money and and solves the crappy truckstop food problem. I have a 3 yr old boy that LOVES bbq, that makes me smile.
