- 12 ounces boneless skinless salmon
- 1⁄2 cup green pepper, diced
- 1⁄2 cup green onion, chopped
- 2 eggs
- 1⁄2 cup Italian seasoned breadcrumbs
- 1 tablespoon garlic, minced
- 1⁄2 tablespoon Dijon mustard
- 1 teaspoon lemon juice
- 1⁄4 teaspoon dried dill
- pepper
directions
- In a large bowl, combine salmon, eggs, lemon juice, mustard, garlic, dill and pepper. Stir in green peppers, green onions and bread crumbs. Form into 4 patties. Spray skillet with nonstick cooking spray. Cook salmon cakes on medium low heat for 5 minutes on each side, or until golden brown.
