Shrimp With Garlic Sauce

This is a simple garlic shrimp that is great served on steamed rice or pasta. I also like to serve it as an appetizer, just double up the recipe depending on amount of guests.

ingredients
- 1⁄2 cup olive oil
- 4 medium garlic cloves, thinly sliced
- 1 medium red pepper, stemmed, seeded and cut in a 1/8-inch dice
- 1 1⁄4 lbs medium shrimp, peeled
- 3 tablespoons lemon juice
- 3 tablespoons dry sherry
- crushed red pepper flakes, to taste
- salt, to taste
- 3 tablespoons parsley, finely chopped, for garnish
directions
- Heat the oil in a large skillet over medium-high heat.
- Add the garlic, pepper and shrimp.
- Cook for about 2 minutes, stirring constantly, just until the shrimp turn pink.
- Increase the heat to high.
- Add the lemon juice, sherry, hot red pepper and salt to taste and bring to a boil.
- Serve immediately, sprinkled with parsley.

First of all, I don't understand the 1/2 cup of olive oil. I used just as much as I needed to. I didn't taste as much garlic as I expected to. I will admit this, though. While I wasn't thinking, I accidentally crushed the garlic to peel it, so I just minced it, but I doubt that really made a difference. If I planned on making it again, I would flour the shrimp to thicken the sauce some.Reply

Simply amazing! This is definitely a keeper! Fast and simple yet full of flavor. I did leave the shells on- let them do some of the work! lol I think it adds to the flavor too when they cook in their shells. Not that this needed any help. These flavors blend superbly and is so yummy! The red pepper added a hint of sweetness to this dish and a burst of pretty color! I served this over my recipe #143499 which soaked up some of the wonderful sauce in this recipe. We were relly bad and even used some crusty bread to get every last delicious drop. You will want to do the same. I even caught dh licking his fingers because it was so good! My chef's hat is off to you V. This is one amazing creation!Reply
