Scotch Eggs

A good way to use up those leftover Easter eggs. My kids will even eat hard boiled eggs this way.

ingredients
- 1 lb bulk pork sausage
- 6 hard-boiled eggs, peeled
- 1 egg, lightly beaten
- 3⁄4 cup crushed corn flakes
directions
- Divide the sausage into six portions; flatten each.
- Shape each portion around an egg.
- Roll in beaten egg then in cornflake crumbs.
- Place ona rack in a baking pan and bake uncovered at 400 for 30 minutes or until meat is no longer pink, turning every 10 minutes.
