ingredients
- 1⁄2 cup sour cream
- 2 tablespoons snipped fresh parsley
- 2 tablespoons tarragon vinegar
- 1 tablespoon sugar
- 1 pinch dill weed
- 3 small cucumbers, sliced thin (English are best)
- 1 small sweet onion, sliced thin
directions
- Combine sour cream, parsley, vinegar, sugar and dill weed.
- Gently add the onion and cucumber slices.
- Cover and chill.
- Best if served the same day.

Very refreshing. I steeped fresh tarragon in vinegar to make the tarragon vinegar, and also used fresh parsley and dill from my garden. A friend gave me a garden standard cucumber, I used that as well. A very nice side dish. I did use a lot more dill than a pinch - I think most Scandinavians would, too!

I told DH to rate these cucumbers from 1-5....he said awesome! Loved these cucumbers! Did use dried parsley and one large English cucumber which was perfect with the amount of dressing.
