- 4 cups diced cooked chicken or 4 cups diced cooked turkey
- 1 cup diced celery
- 1 cup soft breadcrumbs
- 2 tablespoons minced parsley
- 2 cups chicken broth
- 3⁄4 teaspoon sage
- 1 teaspoon poultry seasoning
- 4 eggs, slightly beaten
- 1 teaspoon kosher salt
- 1⁄2 cup milk
directions
- Preheat oven to 350°F.
- Alternate layers of chicken, celery, bread crumbs and parsley in a 13x9x2" baking dish.
- Combine chicken broth, sage, poultry seasoning, eggs, salt and milk. Pour over chicken and bake 1 hour.

Randy, say thanks to your mom for this one! I assembled it in two parts the night before, layering the chicken, celery, bread and parsley in my casserole, mixing the rest in a plastic container and storing both in the fridge. The next evening, I poured the liquid over the casserole and popped it in the oven....no hassle with last-minute meal prep. I think next time I will reduce the amount of sage and salt...they were almost overpowering, especially the salt. I would suggest serving this meal with gravy, like a real roast chicken dinner.
