  • Preheat oven to 350°F.
  • Alternate layers of chicken, celery, bread crumbs and parsley in a 13x9x2" baking dish.
  • Combine chicken broth, sage, poultry seasoning, eggs, salt and milk. Pour over chicken and bake 1 hour.

  1. Randy, say thanks to your mom for this one! I assembled it in two parts the night before, layering the chicken, celery, bread and parsley in my casserole, mixing the rest in a plastic container and storing both in the fridge. The next evening, I poured the liquid over the casserole and popped it in the oven....no hassle with last-minute meal prep. I think next time I will reduce the amount of sage and salt...they were almost overpowering, especially the salt. I would suggest serving this meal with gravy, like a real roast chicken dinner.

I also earned a Masters in Public Health degree in 2013. After a Walt Disney World trip in Dec 2006 where I had to rent an electric scooter because I couldn't manage the walking, I decided to have gastric bypass surgery, which was done Feb 28, 2007. I lost 160 lbs (though I've gained back about 60 of that since). I can't eat as much as I used to, so I want every bite to be extra good!
