- 250 g pecans, chopped
- 3 cups fresh breadcrumbs
- 2 tablespoons butter
- 1 cup finely chopped onion
- 1 cup grated carrot
- 1 cup cottage cheese
- 1 teaspoon dried oregano
- 3 eggs, beaten
- 1 teaspoon salt
- pepper
directions
- Preheat oven to 180°C.
- Chop pecans, onions, carrots.
- Combine pecans and breadcrumbs in a bowl. Cook onions in butter until soft, remove from heat.
- Add to the pecans, add rest of ingredients and mix.
- Put into greased loaf tin.
- Bake 35-40 mins till firm.

I was going to post this recipe as I have the exact one with a few extra ingredients. My version adds 1 cup of celery and 1/2 cup of fresh parsley, cottage cheese is also optional (though I highly recommend it). This loaf is INCREDIBLY delicious, but it does serve more than 6... with my additional ingredients, I have enough for 2 loaves. I like to cook them in a muffin pan for individual portions, it is easier to freeze them that way and everyone gets a crunchy edge (which is my fav. part)! You've got to try this :) Thanks for sharing Redhead.
