Savory Chicken and broth

"This is a basic chicken broth recipe. You can use the broth in recipes calling for canned chicken broth. The beer really gives it a richer and fuller flavor...more savory. You can use the chicken for chicken sandwiches or in recipes calling for cooked chicken. You can also make a good soup with it. Just add your noodles and/or vegetables to it. The seaonings measurements are approximate."

  • Remove skin and fat from the chicken thighs.
  • Place on the bottom of a slow cooker/crock pot.
  • Sprinkle the salt, pepper, thyme leaves, celery seeds and poultry seasoning over the chicken pieces.
  • Mix together until chicken pieces are coated with the seasonings.
  • Pour in the canned chicken broth and beer and stir well.
  • Cook on high for 3 or 4 hours or until chicken is tender and falling off the bones.
  • Allow to cool before deboning the thighs and store in a container in the refrigerator until ready to use.
  • Pour the broth into a glass jar and store in refrigerator until ready to use.

  1. This is a very handy recipe. I used the chicken in a pasta salad with some rotini, chopped green onions, hard boiled egg, and Ranch dressing. Definitely not bland or boring! I added the broth to stuffing I cooked on the side with roast chicken. It made it very flavorfull. I'll be using this in my OAMC rotation because it's versatile and Flavorful. Thanks for sharing AuntWoofie. Made and enjoyed for PAC Spring '09.
     
  2. I used Aunt WoofieWoof's chicken & stock to make armywifereesie's Chicken Bundles Layered Casserole recipe #90266. But I also tasted the chicken & the broth separately, so I could review each independently. The chicken & broth were very tasty. The instructions were easy to follow & the chicken cooked up effortlessly in the crockpot. It fell off the bone at 3 hours. I was able to get 6 thighs into the crockpot, covered with broth, which was a bonus. The broth itself was quite strongly flavored, between the beer & the spices. I liked it very much, but be aware that it bears very little similarity to a canned chicken broth. This is a good thing, unless you are looking for something very neutral to use in cooking.   3. Fixed this for dinner tonight. Wonderful flavor, I think it's the beer! Served it with noodles, excellent. It would be perfect this fall and winter to warm you up. Will be making this again for sure. Great taste. Thanks so much.

I just love to cook. I love to experiment with different recipes and love to get new ones. I love to share my recipes and love to have others taste things I make. I baked a lot while I was living at home...in high school. I have babysat for over 33 years for different people I have cooked meals for them when it was needed. At one time, I babysat 2 children in my apartment and cooked dinner for them, their mom and their grandmother. I loved it. I took care of them for a couple of years. The name AuntWoofieWoof has a very special meaning. I babysat for a family with 3 children in their home several years ago. One day the youngest boy came up to me and said "Aunt Woofie Woof......." and proceeded to say what he had to say. He called me that name for 2 days. When I asked him where he got the name from, his reply was "It was on a Dr Suess tape my momma got me at the Library". :lol: I thought it was so cute that I decided to use it on the internet. I babysat for that family for 8 years!! That little boy is now in middle school. I still see him and his family every now and then. His mom and I keep in touch over the phone. I usually spend Thanksgiving Day with them. It is fun watching the kids grow into fine young adults. The oldest daughter, is in her early 20's, is working and has her own place. She is a beautiful young lady. I am a Substitute Playground Supervisor and a Crossing Guard at an Elementary School.
