5-Ingredient Fix Contest Entry. An unusual way to serve potatoes to be sure, but surprisingly potatoes are simply delicious with a peanut-satay sauce. Fell in love with this sauce on a trip to Thailand. First cooked this during a bbq meal and everyone raved. Had a few more ingredients in it then, but even this condensed recipe is popular with my bbq buddies.

ingredients
- 1 (20 ounce) bag Simply Potatoes Diced Potatoes with Onion
- 1⁄2 teaspoon curry powder
- 1 garlic clove, finely minced
- 1⁄4 cup thai peanut sauce (satay)
- 2 tablespoons extra virgin olive oil
directions
- Mama’s Breakfast Surprise #5FIX.
- Thaw and drain potatoes and place in a large bowl, set aside.
- In a medium bowl mix the curry, garlic and peanut (satay) sauce and stir to thoroughly blend. Set aside.
- Heat the olive oil in a large non-stick skillet then add the potatoes, cooking over medium heat for about 10 minutes. Do not stir or turn potatoes over.
- Turn the potatoes over and add the peanut sauce, stirring to coat all the potatoes. Cook for an additional 7-8 minutes until they are soft and tender and peanut sauce is bubbling.
- Serve with pork chops, steak or roasted chicken.
