ingredients
- 1 pint coffee ice cream
- 2 tablespoons ground coffee (finely ground)
- 1⁄2 cup light rum
- 4 scoops vanilla ice cream
- instant coffee powder
directions
- Spoon coffee ice cream into blender container.
- Add rum + coffee that has been finely ground to a powdery texture & blend on hi-speed until creamy smooth.
- Pour into tall glasses.
- Add 1 scoop of vanilla ice cream to each glass. Sprinkle lightly w/instant coffee powder.

Why am I the first to review this? I have a hard time calling it a soda because there is no soda but somehow I really don't care because I'm blissfully enjoying my rum and ice cream :D. Instead of the vanilla on top I used all Cappuccino With Espresso Chips no sugar added ice cream with Malibu rum..*swoon*. The added espresso powder was also a wonderful thing and I'm a very happy girl right now. Made for Comfort Cafe, Jan 09.
