Root Beer Cookies

  • In a large mixing bowl, cream butter and brown sugar together.
  • Add eggs, one at a time, beating well after each addition.
  • Beat in buttermilk and root beer concentrate.
  • Combine the flour, baking soda, and salt in a separate bowl. Gradually add to creamed mixture.
  • Stir in pecans. (optional).
  • Drop by tablespoonfuls 3 inches apart onto ungreased cookie sheets.
  • Bake at 375 Fahrenheit for 10-12 minutes, or until lightly browned. Remove to wire racks to cool.
  • In a small mixing bowl, combine frosting ingredients; beat until smooth.
  • Frost cooled cookies.

I enjoy baking above all other forms of culinary craft, and it makes it difficult to keep my girlish figure sometimes. :D I work at the local Hot Topic as an assistant manager. I'm a very strong-willed, independent type of person. I can learn to do almost anything if I have all the materials and proper instructions in front of me. I'm an anime nerd, I've been teaching myself Japanese for the last five months or so... I'm an aspiring novelist: I have a few stories finished and many in progress. I have some poetry published, but none of my stories are in print... yet. The tri-level brownies I make for events/special occasions are always a hit. XD
