Salad
- 1 bunch romaine lettuce, ripped into bite size pieces
- 1 cup celery, chopped
- 2 green onions with tops, chopped
- 1 (11 ounce) can mandarin oranges, drained

Caramelized Almonds
- 1⁄4 cup almonds
- 2 tablespoons sugar

Dressing
- 1⁄4 cup salad oil
- 2 tablespoons apple cider vinegar
- 2 tablespoons sugar
- 1⁄2 - 1 teaspoon salt
- 3 dashes Tabasco sauce
- fresh ground black pepper, to taste
directions
- To Caramelize Almonds: Put almonds in a small skillet or saucepan. Sprinkle with sugar. Heat, stirring constantly, until light brown. Put almonds on waxed paper to cool.
- For Dressing: Whisk all ingredients together until well mixed.
- For Salad: Mix all salad ingredients, caramelized almonds and dressing.

Oh, this salad is Good! The romaine with the combination of celery, scallions, and citrus (used navel oranges instead of mandarin) go perfectly together. The dressing, oh the dressing is delicious and when you think it can’t get any better, the sugared almonds prove that it can. A really memorable salad that I would make again without any hesitation. Thank you, NE Lady, for sharing this salad here with us. Made it for FYC tag game.
