Gorgonzola Cheese, Walnut, and Romaine Salad

"This is my husband's favorite salad! It is very elegant - perfect for a dinner party or even a candlelight dinner for two! I recommend using only half of the salad dresssing, and saving the rest for later."

  • Heat oven to 350 and toast the walnut pieces (on baking sheet) for a few minutes.
  • Pour lettuce into bowl.
  • Salt and pepper to taste.
  • Whisk together olive oil, vinegar, and mustard in small bowl.
  • Add cheese and toasted walnut pieces to lettuce.
  • Pour salad dressing over salad and toss well.

  1. I made this salad for the 2 of us, I LOVED it! Just be careful adding the entire amount dressing (which ROCKS) to the lettuce, IT is strong and may overpower. Just drizzle as you go. YUM!

  4. Wow! Yummy! Delish!!!! I love how simplistic this is, yet SOOOOO tasty! My husband wasn't crazy about the gorgonzola, but I LOVED it!! Maybe I'll try some feta for him next time. Thanks so much for sharing! UPDATE: I have tried this with feta, and it is just as good. I forgot to mention that I did substitute mixed greens for the romaine! Still loving it!! :O)
     
  5. This is a very simplistic salad, but also very flavorful. I agree with the poster, only half of the dressing is neccessary for the recipe and it is a bonus to have the extra dressing on hand to use the next day. Thank you Helping Hands for sharing the recipe.

2007 I thought that I would edit my home page...its been over two years, so I its time to update! I have lived in beautiful New Mexico for the last few years (Albuquerque), after 20 years of living on the West Coast (San Francisco and Seattle). I love many things about New Mexico - the perfect weather, in particular; the sunsets; the open land; and the great Southwest food - but also sometimes miss the energy of bigger cities. Rather than cooking a few favorites on a regular basis, I prefer to collect recipes (primarily from the Internet), and try new things often (in fact, my husband jokes that he will try a new dish that he loves and then never see it again :-)). I also love to read, write, travel, work on personal growth, and study/learn. I am a total water baby, who lives in the desert, so I love traveling to tropical locations, where I especially love to snorkle and boggie board! I am very happily married to my best friend, soulmate, partner, and greatest cheerleader and supporter, and we have three grown children, and four grandchildren (so far :-))I am a total foodie (I "live to eat" instead of "eat to live.") :-) I love everything about food...cooking; the delicious scents of a yummy dish, as it cooks; the beautiful presentation of wonderful food; dining out; dining in; the taste of great food; sitting around the table, with friends and family, eating, talking and laughing; nurturing those I love by cooking for them...all of the senusal pleasures that food brings!
