- 12 slices bacon, crispy fried and crumbled
- 1 cup shredded natural swiss cheese
- 1⁄3 cup onion, chopped
- 2 cups milk
- 1 cup Bisquick baking mix
- 4 eggs
- 1⁄4 teaspoon salt
- 1⁄8 teaspoon black pepper
directions
- Heat oven to 400*F; Grease 10-inch quiche dish or pie plate.
- Sprinkle bacon, cheese and onion into plate.
- Beat remaining ingredients together until smooth, 15 seconds in the blender or 1 minute with hand beater.
- Pour into pie plate.
- Bake until knife inserted between center and edge comes out clean, 35 to 40 minutes.
- Cool 5 minutes.
- VARIATION: Can substitute crab meat for the bacon.

This was my delicious lunch today. I made half the recipe, using a 1 qt dish. The quiche was thicker than the one in the original photo, possibly a little softer in texture for that reason. I used Monterey jack cheese, because that was what I had, and chopped up a scallion instead of cutting an onion for that small amount. I did bake it for 35 minutes, even though I only made half. I would like to try adding some herbs next time - some fresh dill or thyme would go well, I think, and give a little punch to the flavor. Hopefully spring will come soon so that I can try that out!
