This was my delicious lunch today. I made half the recipe, using a 1 qt dish. The quiche was thicker than the one in the original photo, possibly a little softer in texture for that reason. I used Monterey jack cheese, because that was what I had, and chopped up a scallion instead of cutting an onion for that small amount. I did bake it for 35 minutes, even though I only made half. I would like to try adding some herbs next time - some fresh dill or thyme would go well, I think, and give a little punch to the flavor. Hopefully spring will come soon so that I can try that out!

I LOVE this recipe. We call it B-FAST. We substitute Jimmy Dean sausage for bacon and add a bit more cheese! Definitely a family favorite.

I made this for breakfast this morning. It was loved by all, esp. my Mom, who was naming the many possibilities for this dish. Thanks! Made for Gnome tag.
