Rocky Road #2

"I haven't tried this version of Rocky Road yet. It came from a Tupperware recipe card. Cooking time is setting time."

Ready In:
30 pieces


  • 375 g dark chocolate melts
  • 100 g milk chocolate, broken into pieces
  • 20 g Copha
  • 40 g butter
  • 1 tablespoon dark cocoa
  • 200 g small marshmallows
  • 23 cup shredded coconut
  • 13 cup sultana
  • 100 g pecans
  • 1 cup chopped nuts, of choice


  • lace dark chocolate, milk chocolate, copha, and butter into a microwave safe jug. Microwave uncovered on high for 3 minutes or until chocolate has softened. Stir slowly and sift in the cocoa.
  • Stir the chocolate until smooth, then transfer to a large mixing bowl.
  • Add the marshmallows, coconut, sultanas, pecans and 3/4 cup of the chopped nuts. Mix thoroughly.
  • Press the mixture into a slice tin, spreading it out into the corners. Scatter over the remaining nuts, lightly pressing them into the chocolate. Refrigerate 15 minutes or until set.
  • Remove from the slice tin and cut into small chunks to serve. Dust with cocoa if desired.

My favourite cookbooks are The Essential Pasta Cookbook, The Central Cookery Book, Flo Bjielkie-Peterson's Country Cookbook, and Greek Cooking (I bought that one in Greece, and it's FANTASTIC). At the minute, we are getting ready to move, which is forcing me to sort through my recipe cabinet. I have been trying out all those recipes that are scribbled on pieces of paper, or torn from magazines, so I can decide ifthey are keepers or not. So far I've found a lot of keepers, and will work at posting them on here. I'm passionate about a lot of things, mainly my kids, animals, and cooking. I won't even start on my peeves, we'll be here all night! lol
