  • Mix the cucumbers, onion and peppers in a bowl.
  • Combine vinegar and sugar and mix well.
  • Pour over vegetables and toss to coat.
  • Chill.

  1. An excellent refreshing salad. I put the sliced cucumbers in a strainer over a bowl to remove any liquid that formed while I was preparing the onion and peppers. Our local fruit and vegetable market had English cucumbers on for 99 cents and peppers were on sale too so this turned out to be an economical salad as well. This recipe would be great picnic fare too. Chilled the salad for about 2 hours before serving for flavors to meld then brought it to room temperature. Served with crispy fried chicken and potato salad. Yum.
     
  2. Great way to use up those fresh garden veggies! I used splenda in place of the sugar and it worked like a charm. I served this over fresh lettuce leaves from our garden. Made for 1.2.3 Hit Wonders.
     
  3. What a lovely twist on a classic cucumber salad. In my own rendition, I used red, yellow and orange peppers as I did not have a green one on hand. Since the yield here is quire large for a solo chef I had lots to enjoy over two days and should add that the salad held up rather beautifully. Indeed, I though the best results came with the salad after sitting in the fridge for 24 hours. (At twelve, the flavors were not nearly as well married and at 36, the veggies lost a little brightness.) I used a product called z-Sweet in lieu of sugar so this was a perfect 0-point side. Thanks bmcnichol! Made for the "I recommend" Game.
     
  4. This was fabulous! I just loved it! I served it with roast beef and Recipe #265017, and it was the perfect foil to the rich potatoes and beef. I made this using the little baby cukes, yellow onion (it was all I had), and a mix of red, yellow, and orange bell peppers. It was so simple, fresh, and crisp! Thanks so much for posting, bmcnichols! Made for Holiday Tag game.
     
  5. Interesting salad that is very good and pretty too. I think this will be able to stay in the fridge for several days -- making it a good choice for potlucks and other events. Thanks for shraring!

I have two boys Eddie 18 and Brandon 10. I have been with my hubby for 16 years. I work full time outside the home and my boys keep me busy at home. Eddie is a singer and base guitar player in a band and Brandon races go karts. We also have a Collie/Beagle mix named Sugar. I love to cook and try out new recipes. My family likes it too but at times ask my to make just "normal" food, as I forget sometimes to make my own TNT recipes. I cook a lot with with my crock pot as it makes life a lot easier for me. I am always on the look out for new crock pot recipes. I'm not much of a baker as I don't like to measure things. I collect cookbooks and recipes in general. I usually start with a recipe and tweak to my families liking. My Rating System: 5 Stars = The whole family enjoyed the dish and it will be added to my TNT cookbook. Book #220911. These recipes will be made again and again. 4 Stars = Recipe was good, but needed some modifications or it was good but not something we would want on a regular basis. Also goes into my TNT-4 star recipe cookbook. Book #220912 3 Stars = It was edible, but won't be made again. 2 Stars = Needs some kind of major adjustments. 1 Stars = Inedible, didn't work, waste of ingredients.
