Quick & Easy Chicken, Broccoli and Brown Rice

  • Heat oil in 10" skillet over medium-high. Add chicken and cook until well-browned on both sides. Remove chicken from the skillet.
  • Stir soup, water, paprika and black pepper in skillet. Heat to a boil.
  • Stir rice and broccoli in skillet. Reduce heat to low. Return chicken to skillet. Sprinkle additional paprika and black pepper over chicken. Cover and cook 5 minutes or until chicken is cooked through and rice is tender.

  1. Easy and quick, just like the title says. Chicken was moist and tender. I substituted regular brown rice so I had to cook it separately and longer. Next time, I might add more broccoli. Husband suggested maybe adding cheese next time- maybe shredded? maybe Campbell's cheese soup? I will have to think about that.
     
  2. This was easy and quick. I did make a few changes based on personal taste. I added onions, garlic and seasoning salt. I also used a can of chicken broth instead of water - which is a bit more liquid so I sprinkled in a bit of chicken gravy at the end to thicken it up. I had leftover cooked chicken that I cubed up and added. It was good - even the baby liked it - thanks
     
  3. My guys loved this creamy chicken and rice dish - I loved that they both got some fresh broccoli thrown in too! Very simple to throw together - although, I did remove my covered pan from the heat for 5 additional minutes after cooking covered for five minutes, to allow the rice and broccoli to continue cooking. The rice and fresh broccoli were perfectly done after sitting for 5 minutes and it had cooled enough to eat right away.
