Quick Cheeseburger Pie (Gold Medal)

"This is the recipe from the Alpha-Bakery Gold Medal cookbook. Simple dinner that actually taste a lot better then it looks on paper. This was one of my favorites growing up and was sad to not see it on this site, so I'm changing that!"

  • Heat oven to 425 degrees F.
  • Prepare crust. Mix last three ingredients together then cut in 1/2 cup shortening with pastry blender or fork until the size of tiny peas. Sprinkle with 3-4 tablespoons water, 1 tablespoon at a time. Stirring with fork after each addition. Mix lightly until all flour is moistened and pastry almost cleans from side of bowl (add 1-2 teaspoons water if necessary.) Pat in the bottom and up sides of a round pan 8 inches x 1 1/2 inches.
  • Bake 15 minutes.
  • Cook beef, onion, and garlic in pan until brown, drain. Sprinkle with salt and flour. Stir in pickle juice, milk, pickles and 1 cup cheese. Spoon into crust.
  • Bake 15 minutes, sprinkle with 1 cup cheese bake until crust is golden brown, about 15 more minutes.

    This was a favorite when my son's were growing up. Nice to see my tastes haven't changed all that much. I made it with ground turkey and skipped the crust. But I remember my boys loving the crust. A simple recipe and a bit different because of the pickles. They add a nice flavor and a little crunch.
