  • Combine all the ingredients, except the wheat germ, in a mixing bowl.
  • Stir to blend.
  • Spoon into lightly oiled muffin tins (or paper baking cups sprayed with non-stick spray, my choice.) Sprinkle on the wheat germ.
  • Bake in a 400 degree oven for 10 to 15 minutes or until lightly browned.

  1. very good moist muffins! the only thing i did differently was to add 1/4 tsp. nutmeg and i omitted the wheat germ. next time i might try subbing whole wheat flour for some of the white flour, just to give it some extra density. i might *slightly* increase the amount of cinnamon and nutmeg next time. thanks dancer :)
     
  2. This is an excellent recipe! I love pumpkin, and have plenty of cans in the house. I substituted currants since I didn't have raisins. I like how low calorie they are too. Thank you Dancer for sharing this yummy recipe. I will be making these probably almost every week! LA :-)
