Pork Chops and Amber Rice

- 6 pork chops, 3/4 inch thick
- salt
- pepper
- 1 1⁄3 cups cooked rice
- 1 cup orange juice
- 1 (10 1/2 ounce) can condensed chicken with rice soup
directions
- Season pork chops with salt and pepper and brown in a heavy skillet.
- Place rice in a 12x7-1/2x2" baking dish.
- Pour orange juice over rice.
- Arrange browned pork chops on rice.
- Pour chicken soup over all.
- Cover; bake at 350F for 45 minutes. Uncover and bake 10 minutes longer.

I first saw this recipe when my first daughter was born in 1973. The recipe was in a book the hospital handed out to new mothers. I made it for many years after. Just a few weeks ago, my older daughter asked me if I remembered making "amber rice" and yes, I did! The recipe I had used Minute Rice. That is the only difference.
