DIRECTIONS

  • Place sugar, glucose, gin and tonic in a medium saucepan.
  • Cook over low heat, without stirring for 10 minutes till sugar dissolves.
  • Increase heat to high, bring to boil.
  • Cook for 10 minutes till mixture reaches 150 C/300 F on candy thermometer.
  • Mixture should be light golden colour.
  • Remove from heat , stir through pink colouring.
  • Lightly grease 12 lollipop or chocolate moulds.
  • Carefully pour in mixture, press a sticj into each one.
  • Allow to cool at room temp till set.
  • Lollipop moulds and sticks are available at speciality kitchenware stores.
